.Sweet Potato Protein Squares! 🍠
What you need: 1 cup (1 small, peeled sweet potato) baked/boiled, 1 c. Gf Oatmeal, 1/2 cup vanilla protein powder, 1-2 scoops collagen powder(optional!), 1 banana, 1 tbsp. Cinnamon, 1/2 tsp baking soda, 1 tsp baking powder, 1 tsp vanilla extract, 1/4 tsp sea salt, 1/3 c. pyure stevia blend, 1+ cup of unsweetened almond milk/water, 2 eggs, 2 tbsp cacao nibs (optional topping). .
What to do: put ALL ingredients (except eggs) in a strong blender (I use a @vitamix ). When all is blended, then add in eggs (do not over blend!). Pour batter into an 8×8 glass/pyrex dish. Sprinkle on cacao nibs/nuts. Bake on 350 for 20-25 min. Store up to 5 days in the refrigerator 🖤
