Adding vegetables to every meal is a good goal😎 Breakfast is sometimes a challenge. These pancakes aren’t fluffy, but taste good! Add organic stevia if you want more sweetness. .
2 c oatmeal
2 scoops collagen protein @vitalproteins
1.5-2 cups almond milk
1 small zucchini or 1/2 of a large (or 1 c spinach. Add applesauce)
1 small banana
1 tbsp gf baking powder
1 tbsp cinnamon
1 tsp vanilla extract/1 scoop vanilla protein powder
1/4 tsp(or a little less) of sea salt(pink:) **add last, don’t over blend! 2 eggs or 2 flaxseed “eggs”
Blend all in a powerful blender (I use the Vitamix), but don’t over blend or they will be tough.
Coconut oil for the skillet! Makes a 10-12 stack depending on pancake sizes. Enjoy!
